Eat Your Vegetables Original

No way I could say exactly where the idea for Eat Your Vegetables came from…but my inspiration is this vegan friendship of Josh and Rebekah’s, which has been blossoming for 10+ years. It seems it’s always easier to accomplish the difficult things in life, with the right support system by one’s side. While I’m certain eating vegan is like riding a bike now to these two goofballs, I’ve witnessed firsthand how many hours go into planning and preparing vegan meals by this duo. Always delicious and nourishing, Josh and Rebekah filled our apartment kitchen years ago with countless laughs and left such a positive taste in my mouth for that lifestyle. I may not agree that vegan eating is the best for my body, but I’ll be forever grateful for the meals shared and expanding of my cooking skills on account of these two. I <3 Kale y’all.
